Our founder, Filippo Candela, felt producing fine Italian cheeses was truly an art form. That belief drove him in 1941 and it continues to inspire the makers of Piacci to this day. He didn’t invent the cheesemaking process; he just spent his life perfecting it.

In order to fully enjoy and appreciate any cheese, it helps to explore the origins of the entire process, what to look for in a great cheese and how best to enjoy it. While it’s impossible to quantify everything we do, our passion and love for producing fine Italian cheeses is, in fact, grounded in this reliable, time-tested knowledge.
